WHere is an easy version of a beverage found on our latest cocktail list. This is a large-volume prepared mix that is loaded with essence of the festive period, rendering it excellent for your holiday party. Any leftover syrup to use in brunch beverages, puddings, or for additional servings of the drink.

Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place every items into a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, remove from the burner allowing it to cool down entirely. Decant into an sterilised bottle, close it keeping it chilled, it will last for around a month.
To make Batch Mix: Mix all the liquids into one large bottle, allow it to infuse for one hour, then filter it best through cheesecloth, so it's fully clarified.
To serve: Pour 85ml of the premix into a stirring glass containing ice, gently stirring carefully for a minute to chill. Strain into a cold coupe glass or equivalent, top with some cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
